chicken pesto pasta

Hello!  Want a quick, easy, filling meal that's sure to be loved by everyone?  Try this chicken pesto pasta.  I have debated sharing it here because it feels a little like cheating...it's really just combining some ingredients to make a yummy dish.  Try it next time you are pinched for time or just want something that doesn't require much thinking- you will love it!


Chicken Pesto Pasta

Ingredients:
  • 1 package pre-cooked chicken strips (I use the kind you can buy in the grocery store near the bacon.  You could also cook your own chicken, but I am going for easy, easy on this one.)
  • 1 tsp. garlic, chopped (Again, I use the pre-chopped garlic that you just scoop out of a jar.)
  • 1 Tbs. olive oil
  • 1 package Buitoni Cheese Tortellini (Find it in the deli section of most grocery stores)
  • 1 package of Buitoni pesto 
  • Parmesan cheese to taste
Directions:
  1. Bring a large pot of water to a boil and cook pasta according to package directions.  (About 8 minutes.)
  2. While pasta cooks, heat olive oil and garlic in a saute pan.  Add chicken and saute to warm through.  Place chicken in a bowl.
  3. Drain the pasta and place in the bowl with the chicken.  Add pesto (as much as desired- I usually use about 3/4 of a package) and toss to coat.
  4. Sprinkle with parmesan cheese and serve warm.
